Gluten Free - Dairy Free - Plant Forward
Warm your Soul Kale Quinoa Salad
2 c cooked quinoa 2 bunch chopped kale 1-15 can chickepeas, drained and roasted 5-6 mandarin oranges 1/3 c pistachios
3 T evoo 1 T molassas 1 T OJ 2 garlic clove, minced 1 T fresh mint 1 tsp salt freshly ground black pepper 1/4 c chopped fresh mint
Toss all salad ingredients together. Mix dressing ingredients in a bowl or jar. I like to use an immersion blender but a whisk or simple shake in a jar is a thumbs up too! Drizzle over salad and eat it up!
